Summer is coming! I can taste it just around the corner… although the weather here in Auckland is being a bit of a tease at the moment! After two beautiful days this week where I thought Summer had arrived and was here to stay, today was wet and miserable and being stuck inside all day with the kids was enough to drive anyone to drink (especially since I’ve been flying solo for 9 days now while Ryan’s in China!
It got me dreaming about long summer days spent sunning my bod and wallowing like a whale in the pool, summer BBQ’s, Sunday sessions with friends in the sunshine and lots of tropical summery drinks to sip on during those warm evenings once the kids are in bed.
I lived on Mojitos in Bali. If we weren’t enjoying a bintang by the pool it was a delicious refreshing 2 for 1 $6 mojito watching the sunset from a beautiful location.
I recently received the new Fly Buys Gift Guide in the post and got browsing with Christmas pressies in mind (YES XMAS! It’s only 5 weeks away people!!) and I stumbled across a yummy looking spirit selection which got me reminiscing about those tasty Bali Mojitos. I had no idea you could get all sorts of alcohol using your Fly Buys points. Christmas shopping for those hard to shop for family members (yes, Dad I am talking about you!) just got a whole lot easier!
So feeling inspired by the spirits range I saw in the Fly Buys Gift Guide I thought I would recreate my own Bali Mojito… with a healthier twist (if that’s possible).
– 1 teaspoon coconut sugar
– ½ lime
– 5 sprigs of mint
– 2 shots of light rum
– soda water
Put the sugar in a tall glass, squeeze in the juice of 1/2 a lime, and toss in the squeezed lime shell. Add mint to the glass and muddle everything together. Finish by adding the rum and a handful of ice. Fill with chilled soda water and lightly stir. Enjoy immediately!
We may not have had 30 degree temperatures or be laying by the pool but I whipped these up for a friend and I as we sat around and had a good ol’ gossip session without a kid in sight! And after doing this parenting gig all by myself the last week and a bit it was total BLISS!
